2. Usages and Applications of Yeast
Yeast is not basically consumed as a final product, but is often used as a mediator in producing various products in white flour is main raw material.
Main usage of yeast is in baking bread (traditional and bulky), confectionaries and sweet baking and home usage as well as baking cakes and cookies. It is possible to say that yeast is used anywhere flour is used to produce something .
In adittion, yeast is used as ferment in several chemical processes like producing alcohol, beer and some hormones as ferment.
Basically, the role of yeast in improving bread structure is summarized in the following four stages:
a. Increasing in the bulk of bread by the release of Co2 during fermentation
b. Improvement in combination and structure of dough through elastic effects caused by dough expansion because of gas production
c. Bread taste improvement by the yeast
d. Addition of nutrients produced by the ferment to the dough.
